Gluten and Egg free Gyoza (Potstickers)

Today was my Mom's birthday. She is also gluten free. So...that means we can't just "go to the store" and pick up the dumpling wrappers like everyone else, yes...we MUST make it from scratch!  So, with the help of my brother Paul, who flattened the dough balls into flat round wrappers using the Tortilla maker, I made these for our Mom's birthday. :-)
You can see some of the flours that go into the gluten free dough: Sorghum, Millet, Tapioca, Xanthan Gum, Brown Rice flour, etc.  If we could use egg, the gluten free dough would be MUCH more pliable, but our son is allergic to egg as well, so I used Ener-G brand Egg Replacer powder.  Here they are before cooking.
Here's a batch all done and crispy. Next time I'd like to make the skins a tiny bit thinner, to accomplish this, I may need to add another tsp of xanthan gum for pliability
I used homegrown Garlic Chives and some Broccoli stems chopped up in them too! Yummy with a dipping sauce made from gluten free soysauce, homegrown Lemon juice, and toasted sesame oil.

Mini Pomegranate...these are in the front yard. Mostly just a decorative plant, the fruit is small and the juice is very tart. But if you need some vitamin C it's edible!

Homemade/Homegrown Food

Here's some homemade Taco fillings. The Guacamole(unmixed here) that has homegrown tomatoes, farmer's market avocado, cilantro, and onions. The ground turkey is from local Pomona farm called Shelton's, they don't do antibiotics.

Here's some Homemade Gluten+Dairy free pizza with homemade crust, pizza sauce, farmer's market red bell peppers & onions, plus organic sausages, bacon and olives. The cheese is non-dairy, casein-free soy cheese. This is before it was baked.

I still bake 2 loaves of gluten-free bread every 2 weeks. I think I've finally got a recipe I'm happy with. I've tried a few from online support groups, some were winners, others were not too good. I took the winner and kept altering it, adding new things, or trying different amounts of the ingredients, and now I think I have my own recipe. The flours in it include Potato Starch, Sorghum, Millet, Amaranth, Buckwheat and Tapioca.

Original Recipe Bread

I think I finally got the hang of baking this gluten free bread. Some of the ingredients are rather unusual: Amaranth, Sorghum, Potato Starch, Oat Flour, Corn Starch, Sucanat, Salt, Olive Oil and Yeast. Most Gluten Free bread avoids Oat Flour because most oats are grown near wheat fields. We can tolerate small amounts of wheat (we're not Celiac) so we opted to use it in place of Tapioca, which makes it a heavier dough.
